Nancy Spiller’s ‘Compromise Cake’
What better way to celebrate a new book than with dessert?! Then again, we don’t think any celebration is complete without a cake. But it’s especially fitting for Nancy Spiller’s food memoir, Compromise Cake: Lessons Learned from My Mother’s Recipe Box. Compromise Cake is both a cookbook and a personal story, and features beautiful hand-drawn illustrations of each recipe along with photographs of Nancy’s mother’s hand-written recipes. As a little gift for the holidays, Nancy would like to share Compromise Cake recipe with readers of Shelf Pleasure. 1 cup seeded raisins
rind of one orange (zest only)
¼ cup chopped nuts
½ cup shortening
½ cup white sugar
2/3 cup brown sugar
2 eggs separated
1 cup sour milk (1 tsp lemon juice or vinegar added to 1 cup of whole or 2 percent milk, sits for 15 minutes or so, until it curdles slightly.)
2 cups flour
1 tsp. soda
½ tsp. salt
Put orange rind and raisins through food chopper twice. Mix small amount of the flour with fruit. Cream shortening, add sugar and blend well. Add egg yolks and beat well Add alternately sour milk and remainder of flour sifted with salt and soda. Next stir in raisins, orange rind and nuts. Fold in stiffly beaten egg whites. Turn into 8” square pan, greased and lined with greased wax paper. Bake at 350 degree for 55 minutes.
When cool frost with confectioner’s sugar icing flavored with grated orange rind.
Equipment—8 inch pan. Egg beater.
